This is what I like to call… A brunch salad! Ever make scrambled eggs, but feel like they’re better warm and eaten right away? Some of you may be saying, “No, they’re good cold!” That just means all the better for this post.. A UNIQUE way to munch on cold protein! Along with the scrambled eggs, I put some hotsauce for a kick, (Nothing wrong with that, just like an omelet in a fresh bed of lettuce;) Some deli ham is good to keep the brunch-ey feeling, along with the protein boost! Finally, a little extra parmesan goes a long way in flavor/good fat!! So… Think outside of the box with this one… Just think brunch on a bed of lettuce! Let that brain get turning!!
